The flame beech and the spalted beech both came from the Bredin estate at Clooncallow, Ballymahon, and the pale beech from Castlecor on the other side of the town. The oak through the centre is what was left of a great oak after we milled the beams and rafters for the restoration of the dovecote at Clooncallow — timber that had been lying on the estate for at least forty-five years before it ever met a saw.

The grain of each strip is selected and orientated so the flame figure carries across the face, with the oak down the centre and the dark spalt lines giving the board its contrast. Treated with a food-safe finishing oil.

A board at 435 × 330 × 60mm and a solid 6kg, built from hard, durable timber that will give a lifetime of use with the proper care and attention. End grain construction is easier on knives than a conventional board and more forgiving over years of use. A genuinely once-off piece, it would make a wonderful gift for a wedding or special birthday.
